In Thunderbird 3.1 when you right-clicked on an address and selected Add to Address Book it would automatically add the address into your Collected Addresses book. In Thunderbird 5.0 though the behavior has changed in now that it places the address in the Personal Address Book and the name is only the user name. However, if you double-click on the star next to the email address you will get this pop-up where you can specify the contact’s name and which address book to place the contact within.

I upgraded to Thunderbird 5 (on Windows7) today. Previously, me messages went our ‘from’ our last name. Now they go out from my husband’s first and last name. I can’t figure out how to change that in the account settings etc. Help!
Tools > Account Settings. Then click on the account name you wish to edit. If you have multiple accounts, you may want to consider using the Identity Chooser add-on
This is helpful info, however I find it’s still putting a copy of every address into my personal address book in ADDITION to the one I select, which is screwing up my sorting filters. Starting to become a huge headache..
